1991 is the year in which the first dairy farm started producing Parmigiano Reggiano from Vacche Rosse (Red Cows) milk in purity. By the end of that decade, and especially in the new millennium, the number of dairies producing the famous cheese with milk from the Reggiana breed has grown exponentially. There are fourteen dairies that have been producing Reggiana breed Parmigiano Reggiano since January 1, 2009. It should be noted that the price of the product paid to producers is always excellent, well above the average market prices of Parmigiano Reggiano: this is the marker of a cheese that is a step above in quality.
