Protection of the product and the brand
ANaBoRaRe (National Association of Reggiana Cattle Breeders) supervises the entire production process, governed by strict regulations that provide for the use of pure milk from the Reggiana breed for the production of Parmigiano Reggiano delle Vacche Rosse. It involves the obligation to feed the cows with green grass, and 90% of feed needs to come from the area; there is a ban on all-in-one meals and GMO feed. Only after having completed at least 24 months of ageing, the cheese becomes "Parmigiano Reggiano delle Vacche Rosse". The Association protects the product and the connection between Breed and Parmigiano Reggiano delle Vacche Rosse by means of its own identifying mark on the rind, made up of the words "Vacche Rosse" arranged in a radial pattern on the outside of the wheel.
