The Parmigiano Reggiano that comes from the Reggiana breed is marked with two additional brands compared to the Parmigiano Reggiano Consortium: they are the "ANaBoRaRe" brand, placed at the centre of the wheel, and the "Vacche Rosse” trademark branded in a radial pattern.
Parmigiano Reggiano made with Reggiana milk is a product that is controlled and traced from the production of milk in the barn to the purchase of the cheese by the final consumer, which guarantees that consumers are choosing the real "Parmigiano - Reggiano delle Vacche Rosse". The checks that are carried out by the Consortium of Parmigiano-Reggiano cheese to guarantee the origin and quality of the product in the twelfth month are added to the checks performed by the ANaBoRaRe Association in order to ensure that the cheese comes from the milk of Reggiana cows and that the high level of quality is always maintained, and indeed that the cheese demonstrates its best characteristics even after twenty-four months of ageing.
In order to achieve these objectives, the whole chain, starting from the breeder and the dairy farm, up to the ageing warehouse, the portioner and the grating laboratory, makes all processing data available in order to manage traceability.
The role of ANaBoRaRe for traceability
Each dairy farm where Parmigiano Reggiano is produced from Reggiana milk, exclusively or in boilers separated from other processes, periodically sends ANaBoRaRe the number of the casein plaque (the personalized plate) of each wheel that is produced.
The association is tasked with:
Checking milk deliveries of Reggiana from producers to dairies interested in the production of Parmigiano Reggiano with this raw material.
- Checking the number of wheels made with Reggiana milk by registering the casein plaques on each wheel.
- Carrying out the fire branding 24 months after production, after a final quality check, applying the brand Vacche Rosse radially on both sides of the wheels, thus definitively attesting the connection between breed - cheese.
